        Want to enjoy and relish the spicy range of specialties cooked with spices selected from the traditional kitchens of Karnataka? Visit Malgudi at Savera Hotels for it is hosting the Karnataka Food Festival.

        Speaking to News Today, Savera Hotels' F &B assistant manager R Muralidharan said that they had been organising such festivals twice a year to provide the authentic taste and flavour of traditional recipes and this one is their third edition in a row.

        'We do concentrate on cuisines catering to people from four southern States viz Andhra Pradesh, Karnataka, Tamilnadu and Kerala' , he said, adding that knowledge about food among people had seen a sea-change as they had start asking for even small deviations from the traditional array of flavours.

        'This is really a good sign for us to serve and satisfy them the real taste of recipes', Muralidharan said.

        He also said such festivals had been organised not only for sales promotion but also for endowing the guests a rich heritage of taste.

        Corporate chef M Giridharan said the festival was open for lunch and dinner and it had cuisines of Karnataka comprising Bunt, Catholic, Gowda Saraswath and Udupi Brahmin communities.

        'Delicacies such as Khotte Kadubu, Karida Maanji and Mysore Mamsa Saaru are on the menu', he said, adding that for the first time in Chennai, soft shell crabs were fried a la Mangalore.

        He also said Pathrode, shallow fried rolls of colcosia leaves stuffed with rice, lentil and spice mix, was another delicacy.

        'Vegetables like bread fruit and raw jack fruit and seafood like lady fish and sea crabs are specially sourced', Giridharan said, adding that accompaniments included neer dosai, shavigae and kadubua.

        The recipes are presented under the guidance of Karnataka cookery expert Chandri Bhat.
